A flavourful mini T-bone steak from the sheeps loin. Generally darker and fattier than lamb. These chops work well grilled, roasted or pan fried. Because mutton comes from older sheep (2 years plus), they require a longer slower cook time than lamb to ensure they become tender. About 10 chops per kilogram at approximately 100g each.
